Reports are that the Nitro-Green Tea and Lime Mousse is a sorbet made with a pot of liquid nitrogen at your table. F.O.G. also expresses a desire to have culinary knowledge of ‘leather chocolates’. I can only concur. Expect a review when I discover that I have ninety-seven pounds and fifty pence to spare.

    The mouse is in a container under pressure. A small amount is formed on a spoon, then placed in a top-open flask of liquid nitrogen. The mouse freezes – obviously – and is then plated. The taste components are very light, with green tea predominating and an undertaste of the lime.

    The tasting menu is, if you will, well worth the cost. The restaurant is beautiful, the service superb, the food flawless.
